At our popular “Hallingbord” serves :
* Rakafisk
(cured trout)
* Gin & juniper marinated Salmon
* Cured Ham
* Cured Elk meat
* Småmat& Lefse.
(must not be compared to a soup)
Still used in Hallingdal today in celebrating of christening, weddings,
and at funerals
* Cows cheese
* Scotch Pancakes
* Sour cream porridge (used in the olden days to give strength
to mothers who had recently given birth)
* Dylle (similar to rice pudding but cooked until it has a caramel
taste).
* Brisketreak (Olden days sweets (liquorice) made from juniper
berries.)

In the olden days they did not have the same conservation methods as we do today, therefore they used either salting, marinating or drying products for conservation.
